It ended up being WAY easier than I thought it would be, because I learned that I can use my stand mixer to shred the chicken. So much faster/easier than with forks! Anyway, I made myself some chicken tacos plus leftovers for other chicken dishes later in the week. Chicken tacos had wheat tortillas, homemade garlic sauce, spinach, madras curry chicken, tomatoes, and homemade pickled onion. Then for dessert, a single cookie in my mini cast iron skillet 😆😆😆 Yum!!!
